Last weekend, my friend Sonja was kind enough to invite me and our friends Craig and Julia over to help her make some Lefsa. What is Lefsa? Well, it’s like a very thin pancake you fry up on a griddle and flip with a very thin, long pretty stick! It was fun! This was the first time I’ve ever seen let alone assisted in helping make Lefsa, and it was fun! Of course, good company makes anything fun!
You start with these little balls of dough (secret recipe!).

Each ball is rolled out on a special measuring board with a special wrapped rolling pin.


See this little thin stick? The one I’m holding and acting like I have a light saber from Star Wars in my hand? You use that little itty bitty thin stick to put the lefsa on the grill, to flip it, and to remove it. (Thanks for taking my picture Craig!)
Here is Sonja coaching me. She is a QUEEN! Not only an amazing cook and fantastic person, but you should see her amazing interior decorating skills! Truly inspiring!

You have to be very careful so you don’t tear that very delicate circle of dough. It’s amazing how thin it really is!
Of course, there was a LOT of sampling going on. A little butter, some sugar…HEAVEN!

When these are done on the grill…they are still so thin! There is actually a huge pile of them here, but they are all so thin, it looks like there is hardly one or two!
Of course, we did have a little something to wash the samples down with…

Craig and Sonja being all sexy for the camera! Don’t you just love Craig’s game bibs? We were watching Bison football while cooking and cheering and yelling and having a good old football game time!
Had a great time bonding with Julia and Sonja. It’s so fun hanging out with the girls (and Craig!). It’s a part of life that I had missed out on for a very long time. And now, I have wonderful intelligent women (and men!) in my life who are a positive influence on me and the surrounding community. They have surrounded me with their love and support and I cherish their friendship and laughter and advice so much!

I had so much fun. I laughed so hard. And…we had some unassociated unusual entertainment!

I chickened out. I ate more Lefsa than I put on the plate (Sorry Sonja!) and with a beer…well…it might not have been very pretty to hang up side down!
What a wonderful gathering! And a great thing to do! I believe that Sonja sends most of the Lefsa created at her Lefsa parties over seas to our soldiers in the dangerous parts of the world. Isn’t that wonderful? A bit of home made love from back home for our Men and Women out there helping the world.
